Slow Milling for Slow Digestion :

Every cooking needs are different in terms of flour milling from fine to course flour and this can be achieved by small milling batches at home settings with 100% whole wheat in your control.

Commercial mills remove 20% of the wheat kernel in order to make white flour. They remove the bran,wheat germ and attempt to enrich the flour by adding few nutrients so removing some of the vital nutrients. Wheat germ is so important as it contains many B vitamins, minerals,Protein and healthy fats. The germ is the embryo which has the potential to sprout into a new plant.

Whole Grain has all the germ,bran and the endosperm which is whole kernel of the grain. Grains are mostly carbohydrate, and we need good amount of carbohydrates for energy. But highly processed grains like white flour,white rice,white bread, and refined-grain cereals and snacks are stripped of important nutrients present in the germ and bran of the whole grain kernel. With no fiber to slow their digestion, refined grains can cause blood sugar levels to spike. This can lead to weight gain and other medical complications over time.

Glycaemic Index.

It is a property of the carbohydrates in different foods. The blood glucose raising ability of the digestible carbohydrates. Low GI foods are those containing carbohydrates that have less impact on blood glucose levels.
